Here in Mexico, our big meal is normally early in the afternoon (around 2-3pm) and dinners are normally something small unless there's an event.
So here's my question, is it ok to skip lunch and only drink water? Since one normally doesn't really need that many calories when sleeping I believe, or I could be wrong, that's why I ask.

It is never good to skip any meals. You can eat more lightly and concentrate on less fatty foods. You could eat salad at lunch and save meat for dinner.

Excellent article, all good points. When I eat 5 - 6 times per day, oftentimes one of those meals will only be 5 almonds (100 Calories). A meal doesn't necessarily have to be something extravagant, just something to keep your metabolism from shutting down.

Well what I heard is you need to eat three meals a day if you can for a healthy diet. But I know people can't always do that. So I guess it's okay to eat one big meal and skip dinner.

Your body need his stuff splitted over the day. That mean you cant eat big breakfast and nothing over the day or eat 1 big meal and nothing else. I eat 6 to 8 meals a day splitted from 300kcal - 650kcal, I totally consume min. 3000kcal (in diet) to 4000kcal (In bulk up phase) a day but thats because I do bodybuilding and I really feel always hungry xD.

I usually eat a light breakfast and dinner. I eat a more calorie heavy lunch because I go the lingers without food after lunch. Like others have said though, don't skip meals. If it's a calorie thing, exercise to get more calories.

As many others have stated, never skip a meal, as it's very unhealthy for your body. Eating a breakfast helps start up your metabolism for the day, and prepares your body for the rest of the meals for the day.
Here is the best analogy that keeps me clear and focused about 5-6 meals at day:
Think of your metabolism/hunger as a fire, and think of food as wood to keep the fire going. In the morning, if you eat breakfast, you'll start a good fire for the day to burn the wood that's coming throughout the day (meals through the day). If you skip breakfast, your fire won't be strong enough to burn the wood that comes when you eat your next meal.
Then, eat small meals that are balanced in nutrition and size. If you put too much wood on your fire, you'll smother it, reducing the amount you burn, and if you eat too little, there won't be enough wood for your fire to burn.
Converted analogy, that basically means if you eat too much food, then your body won't burn it well and you'll end up gaining weight, and if you eat too little the same thing happens. Your body won't adjust well and you usually end up gaining weight.
If you slowly feed wood to the flame throughout the day, you'll have a strong and steady fire burning.

Just wanted to give my two cents as this is something I do.
For me, this works, I've known about how it affects metabolism since before I started doing it too. I think the one thing that many are forgetting here is that we're all built differently, each individual's body will respond differently to certain things.
A normal day for me, wake up at 11AM, eat a bowl of cereal, go to work at 3PM, get off work at 11PM, eat at home until I'm satisfied. This works for me, I feel no illness from doing it, and it does help me lose weight.
Now, I don't know what you would call this exactly, I guess you could call it fasting but I personally think fasting would require a longer period of time, like a full day or longer. At any rate, fasting is something the body responds to nicely. If you do some research on fasting you can find that there are actually a lot of studies on it and most or all suggest it's actually very healthy for various reasons. Most suggest it's good for you simply because your body needs a break once in a while, if you stop eating, your body has more time to sort itself out.
That's just me though, I honestly don't think it's healthy what I do as it's not really effectively fasting, but I do know that it works for what I need right now, and once I accomplish my goal I can work on managing something more regular and even.
Also just want to give another example, my boss at work does this same thing, he doesn't eat any food at work, just before and after, and he's done this all of his life, he's pretty healthy for his age, about 60ish. He has no trouble keeping up with the rest of the young guys at work anyway. Perhaps his only problem is that he's a bit short of breath but that's from smoking for decades. If he's any example of what this kind of eating habit can do for a person, I certainly wouldn't be fast shun the idea.

Never skip your dinner. Skipping the dinner can cause the weakness. You must take something in your dinner. If you don't want to take healthy dinner, take some light foods such as some vegetables soup in your dinner.
