This is what my dad and I have been eating for the last few weeks ever since I read an article about all the health benefits of fish. Of course, I've also been on a sweet potato kick, so why not put them together? This dinner takes little to no effort and is great for a beginner cook. It's for two servings because... um... that's how many there are at my house. Change as needed. Fish & Sweet Potatoes2 medium sweet potatoes/ "yams"1 tablespoon olive oil 1 tablespoon dried thyme 1/4 teaspoon salt 2-3 fillets fish (Your choice, we've used salmon, tuna, and mahi mahi so far, all delicious.)1. Preheat the oven to 450°F. Wash the sweet potatoes and decide if you like the peel. Hint - it's got lots of nutrients. Peel or don't peel, then slice them into 1" thick rounds. Place rounds into a bowl and add olive oil, thyme, and salt; toss to coat. Arrange the slices in a single layer on a baking sheet and bake for 40 minutes. 3. About 15 minutes before sweet potatoes are done, start the fish. There should be instructions on the package. If not, heat oil on medium-high, add fish, and cook about 5 minutes on each side. YMMV, check before eating! 4. Put fish on a plate, salt and pepper it, get out the sweet potatoes, serve and enjoy. Serves 2.
