Maple-Roasted Sweet Potatoes
Sweet potatoes are loaded with Vitamin A and beta-carotene, as well as fiber. There is just enough maple syrup in this dish to accentuate the natural sweetness of the potatoes, without adding unnecessary calories.
Ingredients
2½ lbs. Sweet potatoes, peeled and cut into 1½ inch pieces. 1/3 C. Pure maple syrup 2 T. Unsalted butter, melted 1 T. Fresh lemon juice ½ Tsp. Salt Freshly ground pepper, to taste
Directions:
Preheat oven to 400°F. Arrange sweet potatoes in an even layer in a 9-by-13-inch glass baking dish. Combine maple syrup, butter, lemon juice, salt and pepper in small bowl. Pour the mixture over the sweet potatoes and toss to coat. Cover and bake the sweet potatoes for 15 minutes. Uncover, stir and cook, stirring every 15 minutes, until tender and starting to brown, about 45 to 50 minutes longer. This dish serves 6 – 12 ponies.
