You can substitute lean turkey or chicken for the ground beef if you want to further cut calories, or reduce how much canola oil you use.
Chili
Ingredients:
3 T. Canola oil
2 lbs. Lean ground beef
2 T. McCormick's Spicy Montreal Steak Seasoning
1 lb. Crimini mushrooms, diced
1 Medium yellow onion, diced
3 Celery ribs, diced
1 Red bell pepper, seeded diced
5 Cloves of garlic, minced
2 T. Worcestershire sauce
3 Chipotle peppers in adobo, diced
1 T. Ground cumin
1 Bottle of your favorite beer
15 oz. Can black beans, drained
15 oz. Can crushed tomatoes
1 C. Beef stock
3 T. Fresh thyme
Directions:
Heat a large pot over high heat. Add 2 tablespoons canola oil and the ground beef. Season it with the grill seasoning, brown and crumble it for 3 to 5 minutes. Transfer meat to a bowl and return pot to stove. Reduce to medium-high heat and add the last tablespoon of canola oil. Add the mushrooms and brown them.
Add the remaining vegetables and garlic to the pot. Cook until the vegetables begin to soften. Return the meat to the pot and add the Worcestershire sauce, chipotles in adobo, and cumin. Mix to combine. Add in the beer to deglaze the pot and scrape the bottom. Reduce the beer by half, about 2 minutes. Add the black beans, crushed tomatoes, stock, and thyme.
Reduce the heat and simmer for at least 10 minutes for flavors to combine. Taste and adjust the seasonings if necessary. Garnish each bowl with chopped white onion. Serves 4 – 5 ponies.
